Menu Mix

The distribution of sales volume across menu items, typically expressed as a percentage of total menu revenue.

Menu mix (or sales mix) reports what percentage of total revenue each menu category or item generates. An item with a 15% menu mix accounts for 15% of total sales. Menu mix is the popularity axis in menu engineering analysis; items with high mix but low margin (Plow Horses) are candidates for repricing or portion adjustment.
